So, this happened 3 weeks ago from today. Yep– that’s right– we welcomed a bouncing baby boy into our word of girls and life could not be any sweeter. We are truly blessed! When I was pregnant I promised myself that I would get on track to losing not only the baby weight, but the very large number of weight I need to lose beyond that.
Yes… I am what they call fat, folks… read it and weep. I know I do! But beyond all the weight I have to lose I want to be able to love myself no matter what size I am. And, I think if I start to REALLY love myself, that I will want to take care of myself. I mean, I have 3 kids to chase around and be alive for. I know they love me unconditionally. Why can’t I?
So, when I was given the chance to work with Weight Watchers and their Simple Start program a week ago, I took that as a hint and declared that as the first step in loving myself and getting on a healthier path.
And of course, with any first step there comes a little bit of awkwardness and stepping out of the comfort zone. So, here we go. Here’s something I am going to do that I HATE HATE HATE.

That’s right. I HATE posting pictures of myself that involve more than the neck and above. I really really really despise what I see when I see half or full-body photos of myself. And I hate even more that they sometimes get posted on line! But, you know what, folks? Not anymore. I am here to start loving myself the way that God and others love me.
So, thanks Weight Watchers for given me the opportunity to get out there and start loving myself. Thanks, Weight Watchers, for allowing me the opportunity to try your Simple Start Program and give this busy mom no-brain ideas for meal and snack ideas that will get me on the path to healthy. I am pretty sure this app was designed for me and they know that my phone is pretty much my lifeline. When I saw the snack idea for the gelatin, cottage cheese and pineapple, I had to make it. I am a huge snacker and this sounded like the perfect one to curb my sweets craving! With a 3 week old baby and two crazy girls, I need recipes that are super easy to make and this one, well, it’s probably one of the easiest recipes I have ever made!I love how each component of what I lovingly call a parfait is a different texture. Smooth gelatin, chunky cottage cheese and crunchy pineapple. Yum. So, let’s just cut to the chase and I’ll share with you how to make this healthy snack that tastes delicious!
- 1 small box of sugar-free gelatin, any flavor (I used orange)
- 1 container fat-free cottage cheese
- fresh diced pineapple
- Prepare gelatin according to its instructions on the box. Pour gelatin into parfait or plastic cups. Stick in refrigerator to chill and solidify.
- Once gelatin has set, scoop 2-3 tablespoons of cottage cheese on top.
- Then, top cottage cheese with a spoonful or so of pineapple.
- Eat right away or chill again for later!
I will say, this first week of the Simple Start program has been pretty great. I love the fact that I can just choose what I am going to eat off a list that’s already prepared for me. There’s no counting calories or points during this time and it has been great since I have been preoccupied with adjusting to having a newborn again!
If you’re thinking joining Weight Watchers and their Simple Start program, I won’t stop you. I think it’s been great so far! I can’t wait to share with you how it’s been going after week number too!
