That’s riiiiiiiiiiiiiiiiiiiiight folks, it’s about that time… College football! Woohoo! And you know that if you’re from Oklahoma, things get REAL when it comes to our state college football teams. And every year, there’s always chaos around the time our two teams play each other on the field. It’s a term we ever-so-lovingly call Bedlam. So, I wanted to make a game day food that honored that rivalry, and Jell-O has made it super easy with their collegiate molds!
I found this Boomer Sooner mold at my local Walmart store, but it, along with several other collegiate molds, are sold at Walmart.com. It comes with enough to make up to 48 Jigglers, which is awesome for the price!
Walmart even has a coupon for $.75 off! That is an awesome savings!
So in honor of our Oklahoma bedlam, I made Bedlam Parfaits, which essentially is an orange “poke” (get it? HA!) cake, some yummy whipped cream, mandarin oranges and the Jell-O University of Oklahoma Jigglers all put together in one delicious, personal-sized cup. Oh yea.
Each box comes with 2 mold trays, and 4 boxes of Jell-O. Each box of Jell-O is good for one tray. All you do is boil 2/3 cup water and pour it into a bowl containing the powedered Jell-O and stir until dissolved.
Spray your tray with cooking spray and pour dissolved Jell-O into your mold. Be careful, it’s hot! The cooking spay keeps the Jell-O from sticking to the tray. Stick it into a refrigerator and allow it to cool for 3 hours.
Then, take a straw and poke holes into the cake that should now be cooled. Space it like you see pictured above. For the cake, I used a large box of orange Jell-O, prepared it according to the box instructions and poured it right into the cake pan with the cake after all the holes were poked. Then I stuck it in the refrigerator to chill for 3 hours as well.
Once the Jell-O has a chance to set, take a butter knife and push it along the side of each mold. The Jigglers should pop right out as long as you sprayed it with vegetable spray! Take your Jell-O P0ke cake and cut it into 1/2″ sqaure chunks. This should give you nice bite-sized pieces to scoop into your parfait cups.
For parfait cups, scoop a small amount of the poke cake into the bottom of the cup. Then, you’re going to carefully slip the collegiate Jigglers along the sides of the cup so they can be shown off. The cake will allow it to sand up straight. Then take whipped cream and pipe it on top of the Jigglers and cake and layer as you go. I added some mandarin oranges to the cup to give it some added flavor, texture and color. Feel free to do the same!
I did about 3 layers of this, then topped it with a huge dollop of whipped cream, an OU Jiggler and a Mandarin orange. I think the colors turned out great for both the OU jigglers and the poke cake was the right color for OU’s opposing team too! This will be a great recipe to take to game day gatherings.. it will be a talking point, for sure!
If you are entertaining a large crowd and did not want to do individual cups, you could do the same thing in a trifle bowl as you can in a parfait cup. Either way, it tastes delicious and football fans will love these!
