School started this past week for my oldest. She started 2nd grade and I cannot believe it! Time is flying by so fast. She loves school and I love it too because she is learning so much. By the time she graduates grade school, she will be completely bilingual and biliterate. I think that is just amazing. They work her hard every day in class and it shows because when she gets home she is STARVING (Her words, not mine- lol)! I always have to make sure I have snacks on hand because I will not hear the end of it until there is food in her mouth. I am not even kidding.

After Victoria came home from school, I threw this after school snack tray together in no time. The carrots and grapes were pre-washed so I put them out on the tray, and the Bagel Bites and Delimex Taquitos can both be microwaved, so I just popped them in, cooked them for their allotted times, threw them on the tray and served. Easy peasy! My oldest daughter took no time to dig into her after school snack. She thought she was pretty fancy having her very own snack tray laid out in front of her! Usually she has to raid the cabinets for something to eat, so this was a nice, convenient change to her normal after school snack hunt. I think preparing their meals and snacks ahead of time helps to keep you on track and sane as a parent. I know that when I am organized and have everything thought out and put together, I feel so much better!
