Meat and Potatoes– that’s probably my husband and I’s favorite types of food. Simple, yet full of yummy flavor and oh, so filling (Chinese food comes a close second– just saying’). With the weather being as cold as it’s been, it’s great to fire up the oven and throw together a meal that’s easy with an easy and delicious side. So, along with a very delicious beef roast, carrots and onions, I cooked these super easy parmesan ranch roasted potatoes.
I knew it was a hit when my husband told me to make sure I wrote down the recipe for later. So, I guess that’s what I am doing right now. And since I am such a giving person, I thought I would share it with you all. Because I know you and your loved ones will enjoy it too. So, enjoy this flavorful, yet simple red potato concoction. Nom!
- 8 red potatoes
- 2 tsp salt
- 2 tsp pepper
- 1 ranch dip mix seasoning packet
- 1 cup parmesan cheese
- olive oil
- Preheat oven to 400. Dice red potatoes into one inch squares. Throw into a large mixing bowl. Add ranch packet, parmesan cheese and salt and pepper. Drizzle enough olive oil over the top so it will coat all of the potatoes. Stir potatoes so everything is completely combined and coated over the potatoes. Put into a 9x13 pan, cover with foil and roast for 20 minutes or until potatoes are tender. Uncover and roast for another 5-10 minutes.
