Beef stroganoff is one of my all-time favorite meals. My mom used to make it for us on big holidays or weekends where we could all sit down for a family and enjoy an elaborate meal together. It’s a comfort food that she would make for most of my birthdays or special occasions. I have always loved this recipe and love to make it for my family, but because of the busy life I lead with three kiddos, times for elaborate meals, especially during the week, aren’t in the cards for us! My life right now is all about easy meals. Between activities, chasing kiddos around and working in the evenings on this here little blog, I need something that is not fast food (Lord knows I do NOT need that right now) that I can just throw together and that’s not going to make a big mess in my kitchen nor take long to cook. I think I found that with this recipe right here!

I love how this recipe is so simple– and so comforting– and so much better than picking up something quick on the way home. Not only is my wallet happy, but our bellies are too! So, let me show you step-by-step how easy it is!
Step 2: Take a small onion, do a rough dice and sautee it until they become translucent– about 5-7 minutes.
Step 3: Throw in a package of fresh stew meat and cook it until the meat is mostly browned.
Step 4: Add a container of Campbell’s Sweet Onion Soups for Cooking into the pan (My mom used to use the canned onion soup when she made this recipe, but this new Campbell’s soup product can totally be substituted in and it gives it a nice rich flavor!).
Step 5: Add in the entire container of Savory Portobello Mushroom Soups for Cooking into the pan as well. This one’s a great substitution for a can of Cream of Mushroom soup. Nice!
You can serve this beef stroganoff over noodles, as I know a lot of people who eat stroganoff do, but I prefer to eat mine over a bed of mashed potatoes (I used instant to save even more time during my busy week. Score!). So creamy, so good!

- 1 small onion, diced
- 1 tbsp butter
- 2 lbs Beef stew meat
- 1 container of Sweet Onion Campbell's Soups for Easy Cooking
- 1 container of Portabello Mushroom Campbell's Soups for Easy Cooking
- 1 package sliced fresh mushrooms
- 1 cup sour cream
- Noodles, mashed potatoes or rice
- In a large sauté pan, melt butter over medium-high heat. Add diced onion and sauté until onion becomes transluscent.
- Add stew meat and cook until it's mostly browned.
- Add both containers of Campbell's Soups for Easy Cooking and incorporate all ingredients together.
- Once it comes to a simmer, add mushrooms and cook until mushrooms begin to soften.
- Add sour cream and blend completely
- Serve over noodles, mashed potatoes or cooked rice.
