So, how has your holiday weekend been so far? Mine has been super busy, with house hunting, cleaning and get togethers with family. Actually, this has been my recent weekend plans each weekend, and that’s ok! The get togethers on the weekends is what I usually always enjoy. It’s a chance for us to all sit back, relax, eat food and enjoy each other’s company. I think our weekends would be truly weird without hanging out with our family and close friends. Just about each and every weekend, my husband and I load up the kids, ourselves, some ice and beverages to take over to my husband’s brother’s house for dinner. That’s our ritual, and that’s great! This past weekend, in addition to the ice and drinks, I wanted to make my very popular Coca-Cola cake, and with a twist! I love Coca-Cola, and I love to Share a Coke with those I love!
So, in addition to the Coca-Cola Cake in a pan, I made this delicious cake in individual jars! I love this idea because these are already portioned out. They also serve as really great gifts for a neighbor or a friend, or for someone you may be visiting in the hospital. The possibilities of gifting are endless!
These are mess-free and if we’re outside, like many of us on Memorial Day weekend, we can keep a lid on until it’s time to consume. No more bugs and little fingers reaching in for a treat. I like the sound of that!
You want to know what my favorite thing about this cake is? It’s made with Coca-Cola. My FAVORITE beverage ever! The Coke gives it such a delicious richness and moistness.. It’s really hard to stop eating it. And that may be another great reason to portion it out. Some for everyone!
I got the Coca-Cola at Sam’s Club last weekend because they were having a demo to Share an entire can of Coke with customers. The girls and I really loved that!
You can get the 32-count cans at Sam’s Club for a really reasonable price. With as much as I love Coca-Cola, I enjoy the savings even more!
To make Coca-Cola Cake in a Jar, you can either, A) bake it in the pan as mentioned in the Coca-Cola Cake a la mode recipe I posted last year, scoop the cake into the jars with a spoon and drizzle the icing on top; or you can- B) pour the batter in oven-safe small glass jars (I used 6 pint-sized jars), and bake for 20-25 minutes at 350, with the jars sitting in a pan filled half-way with water during the baking process. Just be sure, when you’re pouring in the batter, to use a funnel so you’re not getting drippings all over the sides of the jar. Also, be sure to spray the inside of your jars with a non-stick spray before you pour in the batter.
To make the cute decorative tops to add to the jar, just cut a square of fabric with pinking shears at least an inch or two bigger than the lid, put the seal on the jar, then the fabric, then screw the outer part of the lid over those two items to secure everything in place. It’s no sew and so easy!

- Cook everything in a pan and scoop cake contents into jars, then add icing or bake in 6 separate pint-sized jars for 20-25 minutes or until you poke a knife through the middle and it comes out clean. Be sure to put all the jars in a baking pan filled half-way with water while it's baking.
