My Mother's Taco Salad Recipe with a Twist!

This is an easy recipe to make for a large (or small crowd)! Light, yet filling and packed full of flavor!

Serves: 6-8 large servings
  • 2 lbs ground beef
  • 2 heads iceburg lettuce
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 1 jar My Brother's House Salsa
  • 1 cup My Brother's Corn & Black Bean Salsa
  • 1 cup whipped salad dressing
  • 3-4 cups shredded colby jack or mexican blend cheese
  • 4 or so cups of crushed cheesy and/or regular tortilla chips
  1. Brown and drain ground beef, put back in pan on the stove on low.
  2. While meat is browning, chop lettuce and peppers and layer into a large salad bowl.
  3. layer two cups of cheese over vegetables.
  4. Add a cup of the My Brother's House Salsa to the ground beef and let simmer for 5-7 minutes, stirring occasionally.
  5. In a small mixing bowl, blend 1 cup of whipped salad dressing, a cup of My Brother's House Salsa, a cup of My Brother's Corn & Black Bean Salsa, and 1.5 teaspoons of sugar.
  6. Layer ground beef over cheese and top with the rest of the cheese.
  7. Pour salad dressing over cheese and spread out evenly.
  8. Layer crushed tortilla chips on top.
  9. Serve in a layered fashion as a way to keep the chips and lettuce from getting soggy.
