Salted Caramel Icebox Cake

  • 2 Cups Whipped Cream (store bought or use my recipe below)
  • 4 Weight Watchers Giant Ice Cream Sandwiches
  • 5.5 Weight Watchers Salted Caramel Ice Cream Candy Bars
  • If you're making the Whipped Cream, you'll need:
  • 2 Cups Heavy Whipping Cream
  • 2 Tablespoons Sugar
  1. To make the whipping cream:
  2. Put a medium metal mixing bowl and a metal whisk in the freezer for about 15 minutes. Place sugar in bottom of mixing bowl and add whipping cream. Whisk constantly for several minutes or until the heavy cream turns more solid and stiff peaks form.
  3. Secure 4 ice cream sandwiches to a cake plate in a square form using a dollop of whipped cream per sandwich.
  4. Lightly spread more whipped cream to the top of the sandwiches.
  5. Add ice cream candy bars on top and make sure all novelties are squared up and even. Use a knife to even up the sides if need be.
  6. Ice the top and sides of the "cake" with the rest of the whipped cream, lightly sprinkle with shaved chocolate and put a generous dollop of whipped cream on top for height and aesthetic reasons.
  7. Freeze until it's time to serve or serve right away.
