When it comes to these two iconic Mrs. Smith’s pie flavors, sometimes it’s hard to think of ways to spice them up a little bit, because they are just so delicious, right?! Totally.

Recipe #1 revamp using Mrs. Smith’s Apple Pies are these simple and super cute Apple Pie Ice Cream Cupcakes! Apple Pie and Ice Cream pair perfectly together, and you get this in a handheld size portion all to yourself. You don’t have to share. It’s ok to be selfish with this recipe. 🙂
After you bake your Mrs. Smith’s Apple Pie to the instructions and allow it to cool, you will put muffin cups into a muffin tin and fill the cups 3/4 of the way full with semi-melted icecream. Then, place the muffin tin in the freezer for at least 2 hours to allow the ice cream to re-freeze. Then, take your cooled apple pie and chop it up, crust and all. Remove your ice cream cups from the freezer and scoop your chopped up apple pie into each individual cup. One to two scoops should be plenty for each cup.
Feel free to stick it back into the freezer or add a dollop of Cool Whip to the top and eat it right on the spot. But beware– it’s SOOOO GOOD!!!
And……since Thanksgiving is practically around the corner, I had to give homage to my favorite pie of the season. The humble Pumpkin Pie! I transformed my Mrs. Smith’s Pumpkin Pie into these light and Fluffy Pumpkin Pie Tarts.. They are the perfect little fall snack and is so tasty!
After you have baked your Mrs. Smith’s Pumpkin Pie and let it cool, scoop out the baked filling and put it into a mixing bowl. add equal parts of Cool Whip and whip both ingredients together. Once blended, scoop your fluffy filling into a mini graham cracker crust and top with a dollop of Cool Whip. Chop up the left over pie crust into bits and sprinkle it on top for a little extra crunch.
I seriously love how these recipes are semi-homemade and really easy because sometimes I just don’t have enough time to slave over the stove. With three kiddos in tow and two jobs, life can get hectic! But I really do enjoy creating new things and I have always loved Cool Whip and Mrs. Smith’s pies, so to be able to create something new and unique, yet easy, is so great. I love it!
