I am going to be completely honest with you all here…. 2014 has kicked my behind! For me, life has been 100 times more hectic since bringing our 3rd little blessing in the world at the beginning of the year. Now don’t get me wrong– I am COMPLETELY happy and blessed, but adding a third child in the mix did quite a job on our schedule, my energy, and more. Now that he is almost a year old, I am starting to feel back to my normal self (I also just recently had surgery to remove my galbladder, so I know that doesn’t help the craze that is my life, but it is what it is!), and starting to get in a routine that works for all of us.
One thing that really helps me is having quick breakfast and snacks on hand. Most mornings I am rushing to get the kiddos ready, out the door, and off to school. To be quite frank, I hardly ever have the time to make breakfast. During the day /I am busy working and taking care of the kiddos (mostly at the same time if you can believe that!). After school my kids are always begging for a snack, so it’s nice to have something on hand, ready to go, whenever they come begging. When I don’t have things prepared for them ahead of time, that sometimes leads to poor food choices, and that is definitely something I try to avoid! Thankfully, Quaker® has come to the rescue with this amazing recipe that is great both for breakfast, snack and/or even for when we are on the go or crazy busy!
These Crunchy Proteins balls are perfect because they are bite sized yet pack an amazing punch and fill you up quickly. They are full of protein, of course, which always makes me feel better when I have it in my diet. They are great tasting and calls for the best of ingredients, which all can be found at Walmart! I used the Quaker Oatmeal ® Squares Brown Sugar. Quaker® has the following amazing cereal products that I absolutely adore. All of them are so good!

Quaker® cereals have always been a favorite of mine and I am happy that I can incorporate them in a new and delicious way!
I love these protein balls because they are creamy and the Quaker® Oatmeal Squares give them a great crunch! These are great refrigerated or frozen if you like these types of things nice and firm. They can also be eaten at room temp when they are a little softer in texture. Any way you eat them, they taste great and are very filling!
First, take a cup or so of the Quaker® Oatmeal Squares, stick them in a zip top baggy and crush them to a fine consistency using your hands or by rolling a can or a rolling pin over the top. This should take a few minutes.
Mix it until you get a cookie dough-like batter. Nice and thick but with some moisture left in it. Feel free to add more protein powder to achieve this consistency.
Roll the protein balls immediately in the crushed Quaker® Oatmeal Squares. You can do this by putting the crushed cereal in a bowl and rolling the balls in the bowl of cereal. When you’re done, feel free to freeze them on a baking sheet and throw them into a zip top baggy and put them back into the freezer. Or you can stick them in a food storage container, pop them in the refrigerator and take out what you need as you need them! I made this batch for my big family vacation and got a lot of rave reviews, so I guess I’ll take my crazy family’s word for it! 🙂
