Salted Caramel Icebox Cake {4 WW Points per Serving}

Dessert. It’s my love language. I love sweet treats, especially around the holidays! It seems like most holiday recipes include desserts and my sweets radar picks up on them every time. Even though I love holiday desserts, I know I have to be careful about that pesky weight gain that can come with it.. can I get an Amen? I definitely try to make my desserts a little lighter if I can, so I am not over-indulging. It’s easy to do, especially around the holidays!

When I make desserts for get-togethers, I really want it to be easy. I have made many icebox cakes for birthdays, etc, and I love them. They are tasty, and they are easy! This icebox cake is appealing for all people, including those who are on Weight Watchers® .

Weight Watchers Novelties

The reason is, I used these two delicious Weight Watchers frozen novelty items for my icebox cake. They are both so good, especially when put together. No baking or cooking needed, just slap these two together with some whipped cream and BAM! Instant dessert that’s decadent and rich. You don’t need a big piece of this dessert.. it really packs a punch!

WW Novelties at Walmart

I picked them up at Walmart, of course, along with whipping cream that I used to make my homemade whipped cream for the icebox cake. I will give you the recipe for that below. For this recipe, grab your pretty cake stand or a platter that will be big enough (approximately 5″x5″). Put a dollop of the homemade whipped cream on 4 Weight Watchers Ice Cream Sandwiches and secure them in a square-like shape. Lightly layer the top with the homemade whipped cream.

Next, you’ll layer 5 and a half Salted Caramel Ice Cream Candy Bars on top of the ice cream sandwiches, making a square shape as well. If any of the rounded parts of the ice cream sandwiches stick out beyond the ice cream candy bars, just square and even them up. It makes icing so much easier, and the cake so much prettier. Lightly sprinkle shaved chocolate to the top of the cake for aesthetic purposes, if you want.

Easy Icebox Cake Recipe

To add some height, squirt a very large dollop of whipped cream to the top with a piping bag or zip top baggy with the corner snipped off. That works just as well.

This cake is super rich, so you don’t want to cut a very large piece for yourself. If you’re conservative, this cake should feed about 10 people. It’s light, cool, sweet, and rich! The perfect ending to any meal.

  • 2 Cups Whipped Cream (store bought or use my recipe below)
  • 4 Weight Watchers Giant Ice Cream Sandwiches
  • 5.5 Weight Watchers Salted Caramel Ice Cream Candy Bars
  • If you're making the Whipped Cream, you'll need:
  • 2 Cups Heavy Whipping Cream
  • 2 Tablespoons Sugar

  1. To make the whipping cream:
  2. Put a medium metal mixing bowl and a metal whisk in the freezer for about 15 minutes. Place sugar in bottom of mixing bowl and add whipping cream. Whisk constantly for several minutes or until the heavy cream turns more solid and stiff peaks form.
  3. Secure 4 ice cream sandwiches to a cake plate in a square form using a dollop of whipped cream per sandwich.
  4. Lightly spread more whipped cream to the top of the sandwiches.
  5. Add ice cream candy bars on top and make sure all novelties are squared up and even. Use a knife to even up the sides if need be.
  6. Ice the top and sides of the "cake" with the rest of the whipped cream, lightly sprinkle with shaved chocolate and put a generous dollop of whipped cream on top for height and aesthetic reasons.
  7. Freeze until it's time to serve or serve right away.
