Easy One Pot {Dutch Oven} Lasagna Recipe

I recently got a dutch oven.. something I have been silently wishing for since… well, I can’t even remember. All I know is I have been impatiently waiting for one, and I finally received one. Woohoo! I have been hearing about all the great things you can do with a dutch oven, so I was excited to take this thing for a whirl. The very first recipe I made using my new toy is this Easy One Pot Lasagna. Because we all know how I like things in my life to be made easy, if possible!

The thought of making lasagna has always scared me. I thought it would always take AT LEAST an hour of preparation, AT LEAST an hour to cook, and AT LEAST 5 different pots and pans to get it all made. I honestly have never baked a lasagna at home that didn’t come completely assembled and ready to pop in the oven.

Lucky for me, I was wrong. So wrong.

Easy One Pot (Dutch Oven) Lasagna

For this recipe, all it took was a pot, a strainer, one utensil and a few yummy ingredients. Read on and you can make it for yourself from start-to-finish in less than 40 minutes. Wahoo! I made this ahead of time, refrigerated it in the dutch oven after it cooled, then heated it back up before serving. It was so delicious. I am dreaming of when I’ll be making this again!

Brown a pound of ground pork with some Italian seasoning, garlic powder, onion powder, salt and pepper. Drain the grease and set it aside for just a minute.

Bertolli Riserva sauce

For this recipe, I used the always-delicious Bertolli Riserva Sauce. I used their Balsamic Vinegar & Caramelized Onions flavor because it is seriously the bomb-diggity. So full of flavor and such a quality sauce. If you can find two jars of this at your local store, I definitely recommend using it for this recipe!

Spread a thin layer of the Bertolli sauce on the bottom of the dutch oven, Make sure the entire bottom is covered so your noodles won’t stick!

Using NO-BOIL lasagna noodles, cover the bottom of the pot. I broke a noodle up to fill the empty spaces. My motto is, the more pasta, the better!

Add another light layer of sauce, then drop large spoons full of cottage cheese on top and spread it around.

Add a layer of ground pork, and a layer of mozzarella cheese and parmesan cheese. Repeat this process one more time, making sure your top layer is nice and cheesy!

Put the lid on your dutch oven and bake it at 325 for 30-35 minutes. the cheese on top should be nice and melted, the noodles should be cooked through and everything should be nice and hot and ready to eat!

This meal pairs nicely with a salad and some garlic bread. It also makes enough to feed a family of 5 (we’re big eaters) and have one or so meals left for lunch the next day.

Ingredients
  • 1 lb ground pork
  • 1 tbs Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 8 or so no-boil lasagna noodles
  • 2 jars Bertolli Riserva sauce
  • 2 cups small curd cottage cheese
  • 2 cups parmesan cheese
  • 2 cups mozzarella cheese

Instructions
  1. Preheat oven to 325.
  2. While oven is preheating, brown ground pork with all spices. Drain and set aside.
  3. Spread a thin layer of Bertolli sauce on the bottom of the dutch oven/pot. This keeps the noodles from sticking to the bottom.
  4. Place a layer of noodles on top, breaking one noodle up in chunks to cover any gaps.
  5. Spread another layer of sauce, a cup of cottage cheese, and a cup of ground pork.
  6. Spread a cup of mozzarella and cup of parmesan cheese on top.
  7. Repeat this layering process one more time, and if you have left over ingredients, go ahead and make a 3rd layer (Just keep in mind that your baking time may be a little longer).
  8. Bake at 325 for 30-35 minutes. The cheese should be melted and everything should be heated throughout!
