Cottage Cheese, Gelatin & Pineapple Parfait
  • 1 small box of sugar-free gelatin, any flavor (I used orange)
  • 1 container fat-free cottage cheese
  • fresh diced pineapple
  1. Prepare gelatin according to its instructions on the box. Pour gelatin into parfait or plastic cups. Stick in refrigerator to chill and solidify.
  2. Once gelatin has set, scoop 2-3 tablespoons of cottage cheese on top.
  3. Then, top cottage cheese with a spoonful or so of pineapple.
  4. Eat right away or chill again for later!
